The Impossibility of Living Kashrut - What to Do?

One of the challenges we face in trying to live the kashrut laws outside of a theocratic state is that we know little about the food we actually eat. In Sweden it is illegal to slaughter livestock the way prescribed by Torah (Muslims face similar problems and restrictions) - so we face fines or jail if we try to do it the proper way. But a much bigger problem is the fact that pork products are used in practically everything these days, from candy (e.g. gelatin) to processed milk (vitamin additives like Vit B13 are extracted from pig). Unless we homegrow everything and raise our own livestock and feed them with food of known content the chances are we are living unkosher one way or another. Even vaccines and serums present a problem.
In such circumstances, we must either get out of the system altogether or, if we are commanded by YHWH to remain where we are, ask for grace and invoke blessings of cleansing when we pray over our food, both to eliminate harmful non-kosher substances as well as additives in general (which are not proscribed by kashrut) which negatively impact our health, frequenrly leading to cancer.
What do people feel about these issues? How far does grace extend? What conclusions are we to draw in terms of getting out of the world system which literally poisons us, let alone forcing us to break kashrut laws?
